I was very pleased with the results of this design. Round, hexagon and square cakes with stenciling and quilting. Gum paste roses and ivy completed the look.

I had the most trouble getting a good deep, dark navy colored royal icing but finally got there! Almost called my friend Grace at midnight to get advice but I showed some self-control! haha

This is another of my old re-photographed cakes ...... taken in my pre-digital days back in 2001.

This cake was an utter nightmare! The bride (daughter of a friend of mine) wanted her Mother's rich chocolate cake for this, and to make her mother's life easier prior to the wedding they were made ahead and frozen. In my infinite wisdom I decided to ice them from frozen as I had been advised that this was the best way to go. I was warned that the cakes might *show a little moisture on the fondant* as they defrosted, but was assured that if I left it alone all would dry out and be well.

*Show a little moisture*? ......... it was more like a swimming pool!
*Dry out*? ....... did it, heck! We resorted to hairdryers and even on the day it still "glistened"! The chocolate cake was obviously pretty soggy too so when I tried to stack the cake the icing cracked!

Luckily this is such an old and bad picture that you can't see how awful the icing is or the repairs ...... but when I look at it I still shudder! I hate the design too ..... I like to think that with 7 years more experience I would do a better job today but at the time the bride was pleased and that's all that matters.

NEVER, never again will I ice a frozen cake!

sista got married this weekend and asked for a hiking themed cake. my fav part was the rocks and the waterfall... ran out of time for the top tier, so clouds and butterflies it had to be. topper is of bride and groom and made out of sculpey.

i've never seen cake go so fast at an asian wedding... (well... half asian... hehehe)

(bottom tier: death by chocolate with chocolate buttercream, middle tier: white cake with lemon-raspberry buttercream, top tier: white cake with lemon curd buttercream)

For one of my best friends. She wasn't going to have a cake (!) for the 8 people attending, mostly because her son is suspected to be celiac and the family is now gluten-free. In a small town getting a gluten-free cake is near impossible.

So, I made her this gluten-free rice krispie cake as a surprise and mailed it to her overnight. We can't make the wedding, so this part of our gift and a "stand-in" for us! Fingers crossed that it arrives intact!

This is the cake I've been struggling with for a long time ...... it's finished at last!

My brief from the bride and groom was that they wanted the cakes to be stacked, looking as though each tier was sitting on mat of crossed bamboo, i.e. a layer of bamboo going in one direction on top of a layer going at right angles to it underneath. They also wanted white Singapore orchids and curly (lucky) bamboo.

This sounded easy ..... but, believe me, it wasn't !!!!
The bamboo on the tiers is made of fondant ....... each segment is hand rolled and slotted into the next (I wanted to try to get it as real looking as possible) and then it was all hand painted and shaded. It took for ever to do!

The cakes are rich fruit, marzipaned and iced in ivory fondant. The bamboo is fondant ..... the flowers and curly bamboo are made of flower paste (gumpaste).

This is a big cake with the bottom tier being 12" square and weighs a ton !!!!! I have to deliver it tomorrow and I'm praying that weather forecast is wrong and we DON'T have rain!

It will be displayed on a silver stand (not like it is in the picture) ........ I'll try and take some photos at the venue tomorrow.

I like the idea of having different types of cake for each layer in particular having sponge layers for kids. My brief for this cake was a red heart shape, the indented design of random hearts was my take on the traditional cornelli finish.

This cake was done for Sallumeh and Ali. They wanted a BIG cake ~ and got it! Ivory fondant icing is decorated with black brocade scrolling on three tiers, quilted with pearlized buttercream piped dots on the other 2. The 'first-name' monogram was designed by Sallumeh, a graphic artist and was prominent throughout the decor.
The cake sits atop an elegant red silk covered pedestal, for additional height and drama, and is surrounded by beautiful roses, calla and twisty twigs
